Sliced Roast Beef Heart on a cutting board, partially sliced with knife between heart and plate of sliced roast beef

Who doesn’t love sliced roast beef for lunch? Big life changes means we are back to school and packing lunches again. But one thing has stayed the same: organ meats every week, as the foundation of a nutrient-dense diet. And Sliced Roast Beef Heart is our new vitamin-and-mineral packed go-to deli meat….

Hunter’s Pie for a Crowd

August 5, 2024 By Janine Farzin Leave a Comment

Hunter's Pie with a creamy cauliflower crust served in a bowl next to the serving pot

Making a large batch of Hunter’s Pie ensures leftovers (cook once, eat twice) and a solid nutrient-dense meal.  For many, it’s also the easiest way to put organ meats on the table.  Why? Because our bodies require nutrients to rebuild tissues, to laugh off minor stresses, and to provide calm focus. And there is no better source than organ meats. …

Moroccan-Inspired Meatloaf with Heart

March 31, 2024 By Janine Farzin 4 Comments

Moroccan-inspired Meatloaf with Heart served on a plate with feta salad and tallow-fried sweet potatoes

Moroccan-Inspired Meatloaf with Heart is a gift from Mary Ruddick.  She mentioned in our conversation last month that she loved making Moroccan-spiced Meatloaf and adding heart, one of her favorite cuts.  I never did get a recipe from her, but I knew I had to create one.  I read several and looked for themes.  This was my take and it came out beautifully. I hope you and your family enjoy it as much as we did!…

Gravy with Giblets over Thanksgiving Turkey, Stuffing and Brussel Sprouts

Happy Thanksgiving! This year, be sure to include the giblets! I like to prepare the gravy right into the roasting pan itself. Along with the giblets, I mix in all the tasty browned bits and gelatin off the bottom of the pan.  Turkey Pan-Gravy with Giblets is the perfect nutrient-dense sauce for your roast turkey and holiday sides!…

Cozy Chicken Heart Soup with Ginger and Rice

October 18, 2023 By Janine Farzin 5 Comments

Cozy Chicken Heart Soup served in a bowl on the counter shown with a ramekin of chopped green onions to the side

Cozy Chicken Heart Soup is perfect for boosting nutrient density as the weather cools. Our family seemed to be on the verge of getting sick this week and I have been focusing on cozy favorites like braised roasts, our favorite Pho, marrow, and simple soups. We started this week with this Chicken Liver Mousse, so I didn’t think we needed more liver, but was still focusing on nutrient-density as I scoured my freezer. I found one lone bag of chicken hearts and knew that now would be a good time to use it….

Stuffed Poblanos with Extra Goodness

February 22, 2023 By Janine Farzin 2 Comments

A plate with two stuffed polano peppers filled with a ground meat and organ meat blend next to some rice and covered with some butter sauce and garnished with raisins and pine nuts

In my opinion, the most sustainable way to incorporate organ meats into our diet and lifestyle is to create meals that we love using these foods. The kinds of meals that our kids will later consider comfort food. The kind that they ask me to make for them on their birthdays.  And while I used to scorn hiding organ meats in meals; I now consider them just another dish. Stuffed Poblanos with Extra Goodness is just one more nutrient-dense meal that my family loves….

Warm Hearty Meatball Sub

January 24, 2023 By Janine Farzin Leave a Comment

Hearty Meatball Sub baked and dripping with cheese, pesto, marinara and meatballs.

This Hearty Meatball Sub appeared first on the EatPluck site.  As James Barry notes, “We recommend using any of the Pluck products with this recipe: Spicy, All-Purpose, Pure or Zesty Garlic.” And I agree! In the meantime, heart is a muscle meat disguised as an organ, meaning it’s easy to love.  Plus, it’s packed with powerhouse antioxidant Coenzyme Q10, so eat up and enjoy!

Sliced Offally Creamy and Delicious Chicken Pot Pie with filling spilling out

Everyone loves pie! Blueberry pie. Pizza pie. Steak and kidney pie. Chicken pot pie! It’s not as ‘boring’ as some of the other foods in our home. My daughter gets to bake, again.  Meanwhile, I strongly believe we must continue to minimize the ‘displacing foods of modern commerce.’  Offally Creamy and Delicious Chicken Pot Pie is a hearty and nourishing meal to please all of us….

Thai Chicken with Basil (and Organs)

January 19, 2022 By Janine Farzin 2 Comments

Thai Chicken with Basil (and Organs) served over romaine with a side of cooked carrots

Thai Chicken with Basil (and Organs!) was inspired by a recent discovery of a chicken and organ blend from Force of Nature. Any ground meat dish deserves to have some organs added. It’s a way to boost nutrient-density in our favorite meals. It’s easy to do by hand, but once I discovered these blends, I’ve incorporated them into many of our meals….

Grilled Beef Heart (on skewers) for the simplest salad

September 12, 2020 By Janine Farzin 5 Comments

Grilled beef heart over a simple romaine salad

I’ve cooked organ meats enough to have made plenty of mistakes, but also to find their sweet spots and to know some of them pretty well. Alas, this recipe for Grilled Beef Heart is a gem, turning the simplest salad into something special and truly nourishing.  And special thanks to Lara for opening her heart, asking about heart, and inspiring this post….
